Sometimes Food is Good Enough to Post About

Last night, I experimented, and came out with an amazing dinner. My husband and sister said so. :-) I love grilled veggies and meat on a skewer, but I've never made them before. Automatically awesome presentation! I found an easy marinade recipe, for which I had all the ingredients on hand, and marinated chicken and green pepper, onion, mushrooms and zucchini for a few hours (veggies and meat separately). When I put them together, I added grape tomatoes. Sadly, our grill ran out of propane, so we put them in the oven at a high temperature for about ten minutes. We cooked some rice to go along with it. The veggies were delicious, but the chicken flavor was out of this world.

I used the Italian Marinade recipe found here. The only changes I made were 1T. dried basil instead of fresh and I added 1T. dried oregano.

Holidays and Trips

Busyness! Here's a brief update on life. Mark had this past week off, so we have been getting lots of family time. On the 4th, we went swimming before lunch, and Irene had so much fun that we had trouble going home. We cooked out for dinner and watched the New York City fireworks display. Yesterday, we had some time without kids. We went to a driving range then out to lunch. It was lovely, and the kids did great with Grandma and a few aunts and uncles. Tomorrow, Covfamikoi starts! That means that today, I am packing. Happy Weekend!
